Donna's Frogmore Stew (no frogs) Empty Donna's Frogmore Stew (no frogs)

This recipe is a version of a low-country boil, but was founded on Frogmore Island, South Carolina (outside Beaufort) and near Hunting Island. This is served at several restaurants in the area. I have served this to more than 50 people during a Superbowl Party and it was definitely a hit!!!

If you have a turkey fryer, it works wonderfully to prepare this stew.

For each batch (will feed 6 persons, if more, just double or triple the amounts listed)

4 ounces Old Bay Seasoning
1 large onion, peeled but whole
2 jalapeno peppers (this is optional, but wonderful if you like hot food)

For each person, you will need:

1/2 lb shrimp (in the shell, the larger, the better)
1/2 lb polish sausage, cut into 1" cubes
3-4 small new potatoes or large potatoes cut into chunks
1-2 corn on the cob


Obtain a pot that is big enough to hold all your ingredients and fill halfway with water. Add Old Bay, onion and jalapeno peppers to the pot and bring to a boil.

While this is getting hot, prepare your table. Layer one garbage bag in the middle of the table and then cover the rest of the table with garbage bags cut in half so only one layer covers the table or use an old plastic tablecloth that you are going to throw away or a cheap one. Layer old newspapers on top of the plastic tablecloth. This will soak up all the extra juice. Make sure there is a good layering of at least 4-5 layers all over the table, but especially in the middle.

Put paper towels at each end of the table along with a salt shaker, extra Old Bay seasoning, 1/2 stick of butter.

The table is now set!!

Recipe continued:

Allow to come to a complete boil and boil for 5 minutes, then add potatoes.
Allow to come to a complete boil and boil for 5 minutes, then add polish sausage.
Allow to come to a complete boil and boil for 5 minutes, then add corn on the cob.
Allow to come to a complete boil and boil for 5 minutes, then add shrimp.

Cook until shrimp is done (probably about 5 minutes after it comes to a boil). Check potatoes, then shrimp for doneness.

Now, at least 2 additional people will be needed other than the cook to drain the pot. Put lid on pot and using pot holders and towels, slowly drain the liquid from the pot. (Be sure to drain it somewhere that you don't need/want grass to grow. This will definitely kill it.)


After draining pot, return to table and slowly pour the contents into the center of the table. Make sure someone is on the opposite side of the table to catch the escapees.

Now, everyone STANDS around the table and just digs in with their fingers. Hand out paper towels and tuck them in bib style. Pour some different types of cocktail sauce out in piles on the table.



CLEANUP

Remove any remaining left-overs if there are any, from the table and put in plastic ziplock bags (it's great steamed). Remove anything that you want to keep from the table and leave the rest of it on the table. Begin at one end of the table and slowly begin to roll the remains up in the layered plastic. Everything goes into the one trashbag that was left whole underneath all the newspaper layers. Now, be sure to take that trash out because by morning, it will be stinkin' to high heaven!!!



I have added other things to this stew, including crab legs and lobster tails. They just make it even better. Add them in, adjusting for their cook times.
